Saint-Nectaire
Made in the Auvergne region of central France, near the Dore Mountains, since the XVII
century by local farmers.
Unpasteurized (raw) cow´s milk of the Salers, Montbeliarde or
Holstein breeds is used to produce it.
It was introduced to the court of King Louis XIV by the Marshal Henri de Saint Nectaire, duke of
La Ferté-Senneterre.
