Emmental grand cru
The Emmentaler originated in the Emme Valley, Switzerland (Berne Canton).
Its origins go back to the XIII century, and it is made from unpasteurized (raw) cow´s milk which are feed with natural herbs and hay, freely in vast pastures.
A yellow, medium hard cheese. It has a savory but mild taste. Eye formation is valued as a sign of maturation and quality. It is used in gratins and fondue, mixed with Gruyere. Its flavor is fruity with notes of nuts, fresh and light.
It has Appellation d’Origine Controlee (AOC).
