Comté
Originating from the Jura Mountains in the French Alps, in the region of Franche-Comté. It is made from unpasteurized (raw) cow´s milk of Montbéliarde or French Simmental breeds.
Also known as de Gruyer from Comté. A semi hard pressed cheese with dusty-brown rind
color, the internal paste is pale creamy yellow, sweet with a rich flavor with fruity notes in the Summer and nuts in the Winter. The texture is a little hard but flexible.
It has Appellation d’Origine Controlee (AOC).
