Cantal joven
Cheese from the region of Auvergne, in the département of Cantal. Dates to the Romans with
its secrets of elaboration, character and wild preserved nature.
It is made from unpasteurized (raw) cow´s milk, with an uncooked pressed paste. The semi
hard cheese is aged in humid and fresh natural caves during at least one month. The cheese
produces, in a spontaneous way, its own-colored crust which evolves as it matures.
