Blue cheese from the region of Auvergne. It is made from unpasteurized (raw) cow´s milk. Its aging time occurs in natural caves, humid and fresh, that add a deep flavor, however soft and balanced, with notes of forest and wild mushrooms.

It has Appellation d’Origine Controlee (AOC).

It is an aromatic cheese, intense, and gets much of its characteristics from the milk of the regions and its cows, that eat fresh natural herbs and flowers that grow in the feeding grounds.

Soft and creamy, with a buttery taste and a moisture and natural texture with blue-green veins of mold.
